Faithful to our principles for highlighting the special characteristics and advantages of olive oil produced in the area of Sitia, Crete, based on decades of experience and know-how, we created the unique product Theion Elaion. For its creation we have chosen olive groves with special characteristics:

Olive groves located in the Sitia Geopark – mountainous and semi-mountainous – dry and irrigated – groomed so that the entire canopy of the trees is highly illuminated – rich in wind and with microclimate and soil that gives the olive fruit superior quality characteristics.

The producers who cultivate these olive groves, are people with love for what they do but also with a special sensitivity for the environment and respect for human thus for many years they have been cultivating exclusively with the method of organic farming.

The company BioSitia SA provided an agronomist who supported these farmers with on-site visits, monitoring and advice throughout the olive growing season; winter cultivation practices, flowering, fruit set, growth and ripening of the fruit as well as the optimal time to harvest, in order to produce the best olives that each region could produce with the given weather conditions as they are formed each time.

For the grinding of the harvested olives, the baton of quality passed to the privately owned oil mill factory of BioSitia SA that grinds exclusively organic olives by cold extraction (cold pressing) in two-phases.

The selection of the olive groves, the cultivation techniques and the oiling in the two-phase oil mill factory were made with the aim of producing a unique organic olive oil of top quality with excellent organoleptic characteristics and rich phenolic content.

The organic olive oil produced in this way is offered to you with the characteristic freshness of the unripe fruit and the pleasant feeling of the “Koroneiki” variety, balanced, slightly bitter and moderately spicy with a long aftertaste greener reminiscent of freshly cut grass.

Each bottle in the context of traceability has a unique detection number that refers to the field. While the choice of materials was made with high standards of protection of the product beyond the elegance.

Το φρέσκο και σωστά επεξεργασμένο ελαιόλαδο με άθερμη και χωρίς νερό ψυχρή έκθλιψη, είναι πλούσιο σε περιεκτικότητα πολυφαινόλων.

Fresh and properly processed olive oil with unheated and water-free cold pressing, is rich in polyphenols.

Olive oil composition: Olive oil consists of 99% of fats (triglycerides and free fatty acids) and 1% of polar components (polyphenols, tocopherols and other natural antioxidants).

Polyphenols are a complex of ingredients contained in the olive fruit and it is attributed to the cloudy appearance and bitter taste of olive oil.

Polyphenols, like tocopherols, are excellent antioxidants for our body, they act and protect cholesterol fatty acids from oxidation, which is why olive oil is considered a “medicine” for our health and helps our body function well.


What Phenols do

Phenols and tocopherols (eg. eleuropein) contribute to the slowing down of the aging process and have strong anti-cancer properties, as they bind free radicals formed during metabolism and prevent the formation of peroxides and hydroperoxides that are associated with some types of cancer.


Bioactive Substances:

a) Oleocanthal: a substance with important anti-inflammatory properties, acts protectively against the risk of dementia and Alzheimer’s disease.

b) Oleasin: is the most antioxidant substance in olive oil and is a derivative of phenolic eleuropein


The daily consumption of the recommended quantity of olive oil contributes:
  1. to maintain normal blood pressure,
  2. to the proper functioning of the digestive system and protection against the development of ulcers in the duodenum and stomach,
  3. in the gradual digestion of carbohydrates and avoidance of the rapid rise in blood glucose, acting beneficially against diabetes,
  4. the development of the brain and nervous system in infants (when consumed by the mother while breastfeeding),
  5. in the improvement of fatty liver,
  6. in the prevention of gallstones,
  7. in maintaining body weight.

Green gold or liquid gold as we call unheated olive oil, guarantees abundant benefit to human health.
